15 Minute Soba Noodle Soup with Baby Bok Choy

This soba noodle soup is ready in 15 minutes and incredibly easy to throw together. It’s loaded with tofu, wakame, and baby bok choy. It gets finished with white miso paste for some umami goodness and garnished with thinly sliced green onion.

Ingredients

  • 4 cups vegetable broth
  • 6 oz extra firm tofu, cubed
  • 3 oz soba noodles
  • 2 tbsp wakame
  • 1 baby bok choy, sliced in half
  • 2 tsp white miso paste
  • 2 green onions, thinly sliced

Preparation

Soba Noodle Soup

In a medium pot, bring vegetable broth to a boil over high heat. Add tofu and boil for 5 minutes. Add soba noodles, wakame, and bok choy, boiling for another 3 minutes until noodles and bok choy are tender. Remove from heat and stir in miso paste. Divide between two bowls and garnish with the thinly sliced green onions.
