Creamy avocado meets zesty lime juice, crunchy edamame, and a hint of chili crisp for a delightful kick. Perfect for a quick breakfast or light lunch, this toast is packed with protein and healthy fats to keep you energized and satisfied throughout the day.

Ingredients

  • ⅔ cup frozen shelled edamame
  • 1 ripe avocado
  • ½ lime, juiced
  • Flaky salt, to taste
  • 2 slices whole grain sourdough, lightly toasted
  • 2 tsp spicy chili crisp

Preparation

Boil Edamame

Bring a small pot of water to a boil over high heat. Add the frozen edamame and let it return to a boil. After 5 minutes remove from heat, drain, and rinse with cold water to chill the edamame.

Avocado Mash

Meanwhile, mash the avocado in a small bowl. Add the lime juice and flaky salt, stirring to combine. Spread avocado mash on the slices of sourdough toast, top with edamame, and finish with the chili crisp.
