Edamame Cucumber Salad

This edamame cucumber salad is the perfect high-protein snack that comes together in just 10 minutes. Tender edamame and diced cucumber get tossed in a spicy, tangy, sesame sauce before getting garnished with black sesame seeds. It’s a super easy way to get in over 20 grams of whole plant protein.

Ingredients

  • Edamame Cucumber Salad

  • 2 cups frozen shelled edamame
  • 1 medium cucumber, diced
  • 2 tbsp soy sauce
  • 1 tbsp water
  • 1 tbsp rice vinegar
  • ½ tsp sesame oil
  • ½ tsp crushed red pepper flakes
  • Dash garlic powder
  • Black sesame seeds, for garnish

Preparation

Boil Edamame

Bring four cups of water to a boil in a medium pot. Add frozen edamame, return to a boil, and cook for 5 minutes. Remove from heat, drain the water, and place in the fridge to chill while you prepare the sauce.

Toss Salad

In a small bowl, whisk together soy sauce, water, rice vinegar, sesame oil, crushed red pepper flakes, and garlic powder. Combine the chilled edamame and diced cucumber in a large bowl and pour sauce mixture over it, tossing to combine. Divide salad between two bowls, garnish with black sesame seeds, and enjoy!
