Fresh Mango & Coconut Milk Smoothie

This smoothie is so creamy and delicious it’s giving orange julius vibes but with mango as the star of the show. The coconut milk adds an amazing richness and the frozen pineapple helps provide the perfect frothy texture. While this would be great as an easy summer morning breakfast, it would also be an amazing dessert to follow some spicy latin or caribbean food.

Ingredients

  • 1 fresh mango, peeled and sliced from pit
  • ½ cup frozen pineapple
  • ½ cup full-fat coconut milk
  • ½ orange, juiced
  • 1 tsp vanilla extract
  • 1 sprig fresh mint, for garnish
  • Unsweetened coconut flakes, for garnish

Preparation

Combine & Blend

Combine mango, pineapple, coconut milk, orange juice, and vanilla in a blender. Puree until smooth. Pour into a glass and top with a sprig of mint and coconut flakes.
