Loaded Mediterranean Spicy Garlic Hummus

This simple garlic hummus gets a spicy kick with the addition of adobo sauce and then it's loaded with seared artichoke hearts, green olives, cherry tomatoes, and fresh parsley. Serve it with pita bread or crackers for an easy appetizer or party snack.
Ingredients

Hummus
- 1 can chickpeas, drained and rinsed
- ½ cup tahini
- 2 cloves garlic
- ½ lemon, juiced
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp cumin
- 3 tbsp adobo sauce

Toppings
- 4 artichoke hearts, quartered
- 1 tbsp olive oil
- ⅓ cup green olives, sliced
- ½ cup cherry tomatoes, halved
- Fresh parsley, for garnish
- Whole grain pita bread, for serving
Preparation
Make Hummus
Add chickpeas, tahini, garlic, lemon juice, olive oil, water, salt, cumin, and adobo sauce to a food processor and puree until smooth.
Heat Artichoke Hearts
Heat 1 tsp olive oil in a small pan over medium low. Add artichoke hearts to pan, lightly searing until browned on both sides, then remove from the pan.
Plate & Serve
Spread a thick layer of hummus on the bottom of a shallow bowl or plate. Drizzle with remaining olive oil. Scatter with seared artichokes, green olives, cherry tomatoes, and parsley. Serve with whole grain pita bread.
