Mediterranean Avocado Chickpea Sandwich

This is the best quick and easy, no cooking required sandwich that you can throw together on a busy day. Mashed avocado gets mixed with a squeeze of lemon and flaky salt before being piled onto lightly toasted whole grain sourdough. It gets loaded with chickpeas, crunchy cucumbers, tangy pickled veggies, and fresh microgreen before getting topped off with a slice of hummus slathered sourdough.
Ingredients
- 1 small avocado, pitted
- 1 tbsp fresh lemon juice
- Flaky salt, to taste
- ¼ cup hummus
- ½ cup cooked chickpeas, drained and rinsed
- ½ medium cucumber, sliced
- ¼ cup pickled radishes (or vegetable of choice)
- ⅔ cup microgreens
- 4 slices whole grain sourdough, lightly toasted
Preparation
Avocado Mash
Scoop the avocado into a small bowl and mash well. Add the fresh lemon juice, flaky salt, and mix well.
Assemble Sandwich
Spread half of the avocado mash on one slice of sourdough. Top with half of the chickpeas, cucumber, radish, and microgreens. Spread half of the hummus on the other slice of bread and top the sandwich. Repeat with the remaining ingredients.

Such a tasty sandwich!! It’s creamy and nutritious. I make it every time I get a fancy loaf of sourdough.
