Roasted Sweet Potato Sandwich with Spicy Maple Tahini

For this sandwich thinly sliced sweet potatoes get roasted until golden brown and piled high on whole grain bread, slathered in a sweet and spicy tahini sauce. A crunchy red cabbage slaw and some lightly wilted kale also get added to round out this delicious veggie sandwich. While it is particularly tasty when served hot, it can also be enjoyed cold and makes for a great addition to a picnic.
Ingredients

Sweet Potato
- 1 large sweet potato, sliced lengthwise into ¼ inch thick pieces
- olive oil
- ¾ tsp chili powder
- ½ tsp garlic powder
- salt and pepper

Cabbage
- 1 ½ cups shredded red cabbage
- ¼ lime, juiced

Sauce
- ¼ cup tahini
- 1 tbsp maple syrup
- 1 tbsp adobo sauce

Greens
- 2 cups thinly sliced kale

Bread
- 4 slices whole grain bread
Preparation
Bake Sweet Potato
Preheat oven to 375°F. Lay slices of sweet potato out on a parchment lined sheet pan. Drizzle with olive oil and toss with chili powder, garlic powder, salt, and pepper. Bake for 20-25 minutes, flipping halfway through, until tender and golden.
Toss Cabbage
While the sweet potatoes are roasting, toss shredded cabbage with lime juice and salt to taste.
Make Sauce
In a small bowl whisk tahini, maple syrup, and adobo sauce until smooth. Depending on how thick your tahini is you may need to thin sauce by adding a tablespoon of water at a time until it becomes a spreadable consistency.
Bake Kale
Toss kale on a small sheet pan with a drizzle of olive oil and salt and pepper to taste. Bake in the oven for about 2 minutes, just until wilted.
Assemble & Serve
To assemble, spread a generous amount of maple tahini sauce on each of the four slices of bread. Divide sweet potato, cabbage, and kale between two pieces of bread and top with remaining slices.

I'm a sucker for a sandwich recipe. This was interesting to make since I had never considered using sweet potato in a sandwich before but it worked out really tasty. I would give a full five stars but I think I over crisped my kale.
