Soy Curl Gyros with Vegan Tzatziki

These Soy Curl Gyros with Vegan Tzatziki bring a plant-based twist to a Mediterranean classic! Juicy soy curls are pan-seared to perfection and paired with a creamy dairy-free tzatziki sauce. Wrapped in warm whole wheat pita and loaded with crisp romaine, juicy cherry tomatoes, and zesty pepperoncini, this gyro is a flavor-packed meal that’s both satisfying and wholesome.

Ingredients

  • Soy Curls

  • 1 ½ cups soy curls
  • ¼ cup warm water
  • 2 tsp Better than Bouillon “No Beef” Base
  • 2 tbsp low sodium soy sauce
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp dried rosemary
  • 1 tsp oregano
  • ¼ tsp black pepper
  • Salt, to taste
  • ½ tbsp olive oil
  • Tzatziki Sauce

  • ¼ cup plain, unsweetened plant-based yogurt
  • ¼ cup grated cucumber
  • 1 tbsp fresh lemon juice
  • 1 clove garlic, finely grated
  • ½ tbsp fresh dill, finely chopped
  • Salt, to taste
  • Gyros

  • 2 whole wheat pita bread
  • 2 cups romaine lettuce
  • 3 oz cherry tomatoes, halved
  • 4 pepperoncini peppers, sliced

Preparation

Prepare Soy Curls

In a large bowl, soak the soy curls in boiling water for 10 minutes to hydrate. While they are soaking, whisk together ¼ cup warm water, Better than Bouillon, soy sauce, garlic powder, onion powder, cumin, rosemary, oregano, black pepper, and salt.

Once soy curls have fully hydrated, drain the water and squeeze out as much excess as possible. Heat olive oil in a large nonstick pan over medium heat and add the soy curls. Cook for 5-8 minutes, tossing occasionally, until lightly browned. Pour the spice mixture over the soy curls and allow them to simmer in the sauce. Cook for 3-5 minutes until all of the liquid has evaporated. Remove from heat.

Prepare Tzatziki Sauce

While the soy curls are cooking, prepare the tzatziki sauce. Using your hands or a clean dish cloth, squeeze as much liquid out of the grated cucumber as possible. In a small bowl, mix together the yogurt, cucumber, lemon juice, garlic, and fresh dill. Season to taste with salt.

Assemble Gyros

Smear a spoonful of tzatziki on the bottom of each pita bread, top with romaine, cherry tomatoes, and pepperoncini peppers before adding the soy curls. Top it off with a few more dollops of tzatziki and enjoy!
