These Morning Glory Pancakes are the perfect wholesome and cozy way to start your day! Made with whole wheat flour, warm spices, and naturally sweetened with applesauce, they’re packed with grated carrots, juicy raisins, and crunchy walnuts for the ultimate texture and flavor. Serve them with a drizzle of warm maple syrup and extra walnuts for a satisfying breakfast that’s both nourishing and delicious!

Ingredients

  • Dry Ingredients

  • ¾ cup whole wheat flour
  • ½ tsp cinnamon
  • ¼ tsp ground ginger
  • 1 ½ tsp baking powder
  • Pinch of salt
  • Wet Ingredients

  • ½ cup plant-based milk
  • ⅓ cup unsweetened applesauce
  • ½ tsp vanilla extract
  • ¼ cup grated carrot
  • ⅛ cup raisins, plus more for topping
  • ¼ cup chopped walnuts, plus more for topping
  • Canola oil, for pan
  • Maple syrup, for serving

Preparation

Soak Raisins

In a small bowl, pour warm water over the raisins and let them hydrate for about 10 minutes before draining the water.

Mix Wet & Dry Ingredients

In a medium bowl whisk together flour, baking powder, cinnamon, ginger, and salt. In a separate small bowl whisk together the applesauce, milk, and vanilla. Pour the wet ingredients into the dry and stir just until combined, being careful not to overmix. It's normal for the mixture to be thick, but you may need to add an extra tablespoon or two of milk if it’s overly thick. Gently fold in the carrots, raisins, and walnuts.

Cook Pancakes

Heat a large non-stick pan over medium heat and brush the pan with a thin layer of oil. When the pan is hot, add approximately ¼ cup of batter for each pancake. Recipe makes four medium pancakes. Since the batter will be quite thick you may need to spread it out a little with a spoon. Cook for 2-3 minutes until bubbles appear on the surface and then flip and cook for another 1-2 minutes until golden brown.

Serve

To serve, top with additional chopped walnuts and a drizzle of warm maple syrup.
