Vegan Cranberry Walnut Power Scones

These Vegan Cranberry Walnut Power Scones are a wholesome, nutrient-packed treat! Made with whole wheat flour, flax seeds, and coconut cream, they’re lightly golden on the outside, yet soft and tender on the inside.

They’re lightly sweetened with coconut sugar and bursting with the tartness of dried cranberries and the crunch of walnuts. Enjoy them warm, fresh out of the oven, or pair them with your favorite jam for a sweeter treat. They make for the perfect nourishing breakfast or afternoon snack!

Ingredients

  • Dry Ingredients

  • 1 ½ cups whole wheat flour
  • ⅓ cup coconut sugar
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • ¼ cup flax seeds
  • Wet Ingredients

  • ½ cup coconut cream
  • ½ cup unsweetened applesauce
  • ½ tsp vanilla extract
  • Add Ins

  • ¾ cup chopped walnuts
  • ¾ cup dried cranberries

Preparation

Preheat the Oven

Preheat the oven to 400°F.

Wet & Dry Ingredients

In a large bowl whisk together the flour, coconut sugar, baking powder, salt, and flax seeds. In a separate bowl, whisk together the coconut cream, applesauce, and vanilla extract. Add the wet ingredients to the dry and mix gently just until combined, being careful not to over mix. The mixture will be slightly sticky. Gently fold in the dried cranberries and walnuts.

Form Scones

Turn out onto a lightly floured surface and pat into a 1 inch thick circle. Transfer to a parchment lined sheet pan and slice into 8 wedges. Bake for 15 minutes until the scones are golden brown.
