- 8 oz silken tofu
- 2 tbsp maple syrup
- 4 tbsp peanut butter powder
- 1 tsp vanilla extract

Preparation
Whisk Pudding
In a medium bowl, whisk silken tofu thoroughly until smooth. Add maple syrup, peanut butter powder, and vanilla extract. Whisk until well combined.
Assemble
Add a few spoonfuls of the pudding to two small jars or serving dishes. Top each with a few slices of banana, layer with remaining pudding, and finish off with remaining banana slices and peanut butter granola.
Tips
If you would prefer to use fresh, natural peanut butter you can substitute 2 tbsp in place of the 4 tbsp of peanut butter powder.
